Yes, I named these for my husband because he loves these. Roasted to your preference, and they are a fantastic side that you can prep and freeze ahead of time!

Serves 6

Ingredients

2-3 Sweet Potatoes (can be Japanese/white flesh or orange flesh)

2 Tbsp Extra Virgin Olive Oil

1 Tsp Italian Seasoning

1/4 Cup Grated Parmesan Cheese

Preheat oven to 425* Peel and chop Sweet Potatoes into 1 inch cubes, and place on a sheet pan. Drizzle EVOO, Italian Seasoning, and Cheese on top of potatoes. Mix until really well combined, and lay seasoned potatoes flat on sheet pan. Bake for about 20 minutes, mix around potatoes, and place back in oven to bake for 20 more minutes. (Adjust the bake time based on preferred "doneness"...we like our pretty crunchy and crispy.)

**If prepping for later: Peel and chop potatoes and place in a freezer ziploc bag with Italian seasoning and cheese. Place bag in freezer. When ready to bake, remove from freezer, break apart the potato pieces, and place on sheet pan. Drizzle with EVOO, and mix until well combined. Bake as stated above.
